Moi Moi (Bean Pudding)

Moi Moi (bean pudding) has a lot of protein and energy-sustaining power. Moi Moi (bean pudding) is a light and healthy diet. Home made bean pudding

Ingredients

  • 3 cups of beans
  • 4-5 fresh chili pepper
  • 1 fresh bell pepper ( tatashe)
  • 2 onions
  • Fish of your choice or eggs ( boiled)
  • 1/2 cup Crayfish
  • 2-3 seasoning cubes
  • 15-20 cl vegetable oil
  • 2-liter water
  • Salt to taste
  • 1/4-1/2 tsp Ginger (optional)
  • 1/4-1/2 tsp Garlic (optional)

Procedure

  1. Remove shaft and stone from beans ( This process is important for those using a blender to peel the beans).
  2. Soak your beans in water for about 10 minutes, rub the beans seeds between your palm to loosen the skin of the beans, change the water from time to time and separate the coat from the beans. continue this process until all the skin is peeled off. You can also use a blender to peel your beans, pour in your into the blender half full, fill the remaining half of the blender with water. you can start and stop your blender immediately, do this for 4-5 times. Pour out and strain off the peels. Repeat the process until all beans are peeled.
  3. After you are through with peeling the beans. Soak beans in water for about 30 minutes to ease blending ( If you use the blender peeling method).
  4. Wash your fresh chili pepper, red bell pepper(remove seeds from the bell pepper), onions and blend with washed and softened beans till a smooth consistency is achieved.
  5. In a pot add your Fish(if using), crayfish, onions, seasoning cubes, and salt, bring to a boil. After boiling, remove the fish from the pot and debone.
  6. Pour the smooth paste into a bowl, add the stock from the fish, add salt, seasoning cube, garlic, ginger, and vegetable oil and stir well. Add little water at a time and mix well.
  7. Place a pot or steamer on stove or gas. Add water to the pot or steamer and bring to a boil. Pad the bottom of the pot with paper or stick from the leaves if using. Prepare your tin, plate, nylon or leaves.
  8. Dish the puree into the containers of your choice and add the boiled fish or egg and cover or fold. Place inside the pot of boiling water, cover and allow to cook for 15 to 20 minutes.
  9. Serve with Jollof rice, bread, akamu e.t.c.
