Nigerian Beans and Yam Porridge

Beans and yam porridge is a typical Nigerian dish. It’s made up of a mixture of beans, yam, palm oil, crayfish e.t.c. Beans are seeds from the Fabaceae family, commonly referred to as legume. Beans are sources of protein (which may be a vital nutrient that plays a serious role in virtually everything the body does), fiber, and vitamins.

Beans offer many health benefits which include: It ability to assist reduce the danger of cancer and it also helps to stabilize blood sugar levels and stop diabetes. Yam is a good source of energy, it contains a soluble dietary fiber which helps reduce constipation and reduces bad cholesterol. Yam is a superb source of vitamin B-complex group.

Ingredients

  • 2 cups honey beans
  • 500 g yam
  • Salt to taste
  • 1/4 cup palm oil
  • 1 tablespoon crayfish (optional)
  • 3-4 Rodo pepper (ground)
  • 2 onions
  • 4 cups of water

Procedure

  1. Pick the beans to remove stones and dirt. Put a pot of water (3 cups) on heat and allow to boil.
  2. Wash the beans thoroughly and add to the boiling water. Slice one onion and add to the pot. Add little salt and cover, allow to cook until soft. If you are using a pressure cooker, cook the bean for about 30 to 35 minutes.
  3. Peel the yam and cut into cubes. In another pot, cook yam until tender and set aside.
  4. In a saucepan, heat your palm oil, add sliced onion, ground or blended pepper and crayfish, fry for about 5 minutes, and set aside.
  5. When the beans is cooked, add your yam and mix thoroughly. Add the fried pepper to the beans and yam mixture and mix thoroughly.
  6. Add more salt if necessary. Cover and allow the mixture to simmer for a few minutes.
