How to make puff puff with milk (milky puff puff).

Puff puff is high in calories but a lot of people enjoy it. Puff puff balls are sweet and soft. However addition of milk to this recipe makes it sweeter and softer. Puff puff are made from the combination of flour, yeast, sugar and water deep fried in hot oil to get a golden brown colour. In this recipe i will be making use of more milk than water. If you wish to take something different from the regular puff puff, i would advice you try this recipe.

The addition of milk to this recipe makes it more beneficial to the body than regular puff puff. Benefits of milk include: Calcium ( which helps to build healthy bones and teeth), Protein ( which serves as a source of energy), Potassium (which helps maintain a healthy blood pressure), Phosphorus ( which help strengthen bones and generate energy). It also contains vitamin D, vitamin B12, vitamin A and Niacin. 

Puff puff is also known as puff puff in Nigeria and Sierra Leone, Bofrot in Ghana, Mikate in Congo, Beinye in Cameroon, Ligemat in Sudan and Kala in Liberia.

Ingredient

  • 200 grams flour
  • 2 grams yeast
  • 60 grams sugar
  • 200 milliliters milk
  • 80 milliliters water
  • oil for frying 
  • 1/4 teaspoon nutmeg (optional)
  • Pinch of cinnamon (optional).

Instructions

  1. In a bowl add warm water, yeast and sugar. Set aside for 5 minute.
  2. In another bowl, add flour, nutmeg and cinnamon. Mix all dry ingredients together.
  3. Pour the mixture of the wet ingredient (milk, yeast and sugar mixture) into the dry ingredient (flour, nutmeg and cinnamon mixture) and mix till it is well incorporated.
  4. Set the mixture in a warm place and allow it to rise or double in size (approximately 1 hour 30 minute)
  5. In a sauce pan, pour oil about 5-6 centimeters high and place on medium heat until oil is 375 degrees ( Note: little oil will flatten the balls)
  6. Dip your hands in cold water because the dough is sticky. Grab a little of the dough at a time and drop in hot oil . Do not overcrowd the pan. 
  7. Fry for few minutes until the bottom side is golden brown.
  8. Turn the balls over and fry for some minutes until the other side is also golden brown.
  9. Remove from heat and place on paper towel to drain excess oil.
