How To Prepare Nigerian Party Jollof Rice

Nigerian Jollof Rice is made from rice (which is a great source of energy), Tomatoes (which helps to prevent cancer), Pepper (which contains vitamins), and onions (which help to reduce inflammation). It has a unique ability to lift everybody’s mood and it also makes the atmosphere friendlier.

Nigerian party Jollof rice is known for its distinct smokiness as it is cooked on an open fire. At home, we cook it on the stovetop and leave the rice to burn a little at the bottom of the pan in order to achieve the party smoky flavor.

It is not eaten only in Nigeria, It is eaten in some African countries like Ghana, Cameroon, Senegal e.t.c. It is cooked in several ways across all these countries.

Ingredients

  • 4 cups long-grain rice
  • 4 fresh tomatoes
  • 1 large onion
  • 1 small onion (chopped)
  • 1 bell pepper (tatashe)
  • 6 habanero pepper (Rodo)
  • 1 sachet or can tomato paste
  • 1 teaspoon dry thyme
  • 1 teaspoon curry powder
  • Salt to taste
  • 2 seasoning cubes
  • 1 tablespoon butter(optional)
  • 150ml vegetable oil
  • 2-3 bay leaves
  • 3-4 cups stock or water

Procedure

  1. Blend tomatoes, onion, red bell pepper ( remove the seed from red bell pepper before blending), and habanero pepper to a smooth paste.
  2. In a medium pot cook the blended ingredient till the water from the tomatoes dries up. set aside.
  3. Wash the rice thoroughly and parboil. Wash the parboiled rice to get rid of the starch and put it in a sieve to drain.
  4. Heat oil and butter in a pot. Add chopped onions and allow to fry for some minutes. pour in your tomato paste and allow it to fry for about 5 to 10 minutes. Stir continuously to avoid burning.
  5. Add in the cooked blended ingredients, seasoning cubes, curry, and thyme. Mix well and fry for about 10 to 15 minutes. Add in your stock or water and salt. Allow to boil for 5 to 10 minutes.
  6. Add the drained parboiled rice. The stock or water level should be the same as the level of the rice. This is to ensure that all the water dries up by the time the rice is cooked.
  7. Cover the pot and allow to cook on medium heat for about 30 minutes or until the water dries up. Once cooked, mix well to combine ingredients. Cover and let it stay on heat for 2 minutes.
  8. Serve with fried plantain, salad or coleslaw, and any meat of your choice.
