Nigerian Stew

Nigerian stew is a combination of solid food ingredients like fresh tomatoes, scotch bonnet, red bell pepper e.t.c to produce a liquid or semi solid spiced with seasoning cube, salt, curry, thyme, ginger, garlic e.t.c. It is usually served with rice, dodo, plantain e.t.c.

Nigerian stew benefits include high antioxidant level, Anti-inflammatory power, high source of protein and vitamins e.t.c.

Ingredients

  1. 8 Large fresh tomatoes
  2. 3-5 Scotch bonnet (ata rodo)
  3. 3 large red bell pepper (tatashe).
  4. 2 large onions
  5. Small thumb size ginger (optional)
  6. 3 cloves garlic (optional)
  7. 1000 grams meat of your choice
  8. Vegetable oil
  9. 1 teaspoon curry and thyme (optional)
  10. Seasoning Cubes
  11. Salt
  12. Water

Procedure

  • Wash the tomatoes, scotch bonnet, red bell pepper, onions, ginger, garlic (slice the onion, ginger and garlic).
  • Put in a pot, add little water and bring to boil.
  • After boiling, drain the water and blend to a puree. Pour the blended pepper in a pot and boil for 5 minutes (add little oil when boiling)
  • Boil your choice of meat with seasoning cube, salt, onions, curry, thyme and water ( little amount of water ) and set aside.
  • Pour your desired amount of vegetable oil in a pot, add little sliced onions and allow to fry for about 3-5 minutes, removed the fried onions from the oil.
  • Add the puree and cook on low heat, add stock from the meat (if there is any), seasoning cube and salt, allow to cook for about 30 minutes.
  • Add the meat and allow to cook for another 5 minutes. Your stew is ready.
