How To Make Nigerian Fried Rice

Fried rice

Nigerian fried rice is one of the popular rice dishes after jollof rice. It is said to be the companion of Jollof rice at most events. Rice is a staple lunch or dinner dish in Nigeria. It is an excellent source of full packed vitamin (E, B, Thiamin, niacin), mineral, and potassium.

When making this recipe, the version of mixed vegetables is one of the most popular choice in Nigeria, you can also add shrimp. If you are making a vegan fried rice, you will have to omit the use of liver or shrimp in your recipe.

Fried Rice

Already parboiled rice is needed to make the process very fast and easy. If you don’t have parboiled rice, you can check how to make that here. You can use any kind of rice for this recipe.

Fried Rice

Ingredients

  • 2 cups Parboiled Rice
  • 1/2kg – 1kg Chicken or Turkey
  • 2-3 Carrots
  • 1/4 cup Green pea
  • 1/4 cup Green Bell Pepper
  • 1/4 cup Green Beans
  • 1 cup Beef Liver
  • 1/4 cup Sweet corn
  • 2 Big Onions
  • 1 tablespoon Curry Powder
  • Vegetable Oil or Coconut oil
  • Seasoning cubes
  • 1/2 teaspoon thyme
  • Salt

Procedure

Stage One: Preparing the stock and Liver

  1. Clean up the chicken or turkey to remove dirt and blood. In a pot add your cleaned chicken or turkey, a teaspoon of thyme, a teaspoon of curry, seasoning cube, and onions slices. Add a cup of water and cook the chicken or turkey for 15 minutes. Pour the cooked chicken or turkey in a strainer to separate the chicken or turkey from the stock. 
  2. Set the stock aside. You can either fry or grill your chicken or turkey.
  3. Wash and place the cow liver in a pot. Add seasoning cube and salt to taste. Cook the cow liver for 10 minutes and allow to cool then cut into cubes and set aside.

Stage Two: Preparing the vegetables

  1. Dice the onions and set aside
  2. Wash and peel the carrot and cut into small cubes.
  3. Remove the seeds of the green bell pepper and cut it into small cubes.
  4. Place the carrot and green peas in boiling water for 5 minutes. Strain out and place in bowl of cold water to stop the cooking process. Pour in a sieve and set aside.

Stage Three: Preparing the fried rice.

  1. Pour the reserved chicken stock into a large pot and bring to a boil. Add your parboiled rice. The stock should be at the same level as the rice so that when it dries up completely the rice will be done. Note: Add water if the stock won’t be enough to cook the rice.
  2. Add your seasoning cubes, curry powder, and salt to taste. Leave it to cook on medium heat until it is done.
  3. In a saucepan heat up oil, add the onions, carrots, peas, green bell pepper and diced liver, little salt to taste…. Stir fry for 1 to 2 minutes and pour into a bowl.
  4. The rice will be fried in small batches. Divide the stir-fried vegetables into equal portions. The size of your saucepan will determine the number of portions.
  5. Pour a portion of stir-fried mix into the frying pan; add the rice and stir-fry for 2-3 minutes.
  6. Repeat this process for the remaining rice and veggie mix.
